S’mores Pop Tarts baked into a batch of brownies? YES! These brownies are super easy to make (one bowl recipe!), and you could actually use any flavor of Pop Tarts that you’d like, should you feel like experimenting. I went with S’mores because MARSHMALLOWS.
For the brownies you’ll need:
4 oz. unsweetened chocolate
1 1/2 sticks unsalted butter
2 c. granulated sugar
3 eggs
2 t. vanilla
1 c. flour
about 6 S’mores Pop Tarts
a few big handfuls of mini marshmallows
a handful of chocolate chips
Directions:
Pre-heat oven to 350 degrees (F).
To make the brownies, melt the butter and the chocolate in a microwave-safe bowl on high for 90 seconds. Mix until the butter and chocolate are all combined, and all the chocolate is melted. Stir in the sugar, and then add the eggs, one at a time. Add the vanilla. Then stir in the flour until just combined.
Pour half of the brownie batter into a greased 9x9 baking dish lined with parchment paper. Arrange the Pop Tarts in a single layer on top of the brownie batter. Pour the rest of the brownie batter over the Pop Tops, covering the pastries and spreading the batter all the way to the edges of the pan.
Bake for about 23-25 minutes until the brownies are set and don’t jiggle when you slightly shake the pan (taking care not over-bake, they’ll set a little more as they cool, and over-baking will dry them out). Remove the brownies from the oven and sprinkle some chocolate chips and a generous layer of mini marshmallows over the top, while the brownies are still warm. If you’d like, you can toast the marshmallows for a few seconds under the broiler, to get them all golden brown and toasty. Allow the brownies to completely cool in the pan before cutting and serving—they’ll be gooey and messy and delicious with ice cream.
