Goonies Cupcakes Stuffed with Baby Ruth Candy Bars!

HEY YOUUUUU GUYYYYYS! Look at these Goonies cupcakes! They’re stuffed with Sloth’s favorite Baby Ruth candy bar. Of course. You can follow this recipe, or make your own favorite cupcakes and just plop a Baby Ruth in the middle before baking. This recipe will make about 16-18 cupcakes.

For the cupcakes you’ll need:

1 1/2 sticks unsalted butter, room temperature
1 1/2 c. granulated sugar
3 eggs
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
2 t. vanilla
2 1/2 c. flour
1 1/3 c. milk 
15-18 Fun Size Baby Ruth candy bars 

For the buttercream you’ll need:

2 sticks unsalted butter, room temperature
2 c. powdered sugar
2 t. vanilla extract

Directions: 

Pre-heat the oven to 350 degrees (F).

Cream together the butter and the sugar, until fluffy. Add in the eggs, one at a time. Stop to scrape down the sides of the bowl to make sure all the ingredients are well incorporated. With the mixer on low add the baking soda, baking powder, vanilla, and salt and beat until combined. Then add in the flour and the milk, alternating between the two in 1/2 c. (give or take) increments. Beat until smooth. 

Spoon a heaping tablespoon of cake batter into paper-lined cupcake tins. Put one Baby Ruth in each tin, then spoon another heaping tablespoon of batter on top of that so the candy is completely covered and the tins are about 3/4 of the way full.

Bake for about 24 minutes, until the cake is set and starting to turn golden brown on top. Let cool, then make the buttercream.

Whip together the butter, sugar, and vanilla on high speed until smooth. Taste, then add a little more vanilla if necessary (I like a lot of vanilla). 

Frost each cupcake, leaving some of the frosting for decoration, if you’d like. I just dyed a couple tablespoons black and another couple tablespoons orange. It helps to draw your pattern in the frosting with a toothpick first, then just trace over that with your pastry bag that’s been fitted with a small writing tip.

Eat them while watching The Goonies, of course!
