June 3rd (that’s tomorrow!) is National Donut Day! Clearly you should celebrate by baking some donuts into a cake. Just use your favorite cake batter, fill cupcake tins about 1/3 of the way full, plop some donut holes or mini donuts into the cupcake tin, cover with a little more batter, then bake! I recommend topping them with some espresso buttercream, because what else would you pair with donut-filled cupcakes?
(To make some tasty espresso buttercream, just follow the recipe for vanilla buttercream found here and then add instant espresso to taste. I ended up using a few teaspoons worth. Easy!)
