To commemorate the first snow of the season here in Seattle, I baked coconut Raffaello candy balls (which looks like snowballs on their own) into mini vanilla cupcakes, and topped it with a mound of vanilla buttercream and more coconut! I wouldn’t mind having one of these thrown at me. Delicious!  Here’s the recipe.
